Cervim was established for valuing, protecting and promoting the mountain viticulture, “heroic” as it is practised with particularly adverse environmental conditions, especially for the steepness of the most abrupt sides. And the same goes for wine growing on smaller islands, with similar difficult contexts. The institute prepares technical studies and publications for the sector’s experts, as well as carrying out tasks of safeguarding and arranging the territory. It has its offices in Aosta and includes an assembly, a Board of Directors and a technical-scientific Committee, consisting of delegates of the associated Regions.
